If you’ve been following this blog for any length of time you will probably know this about me: I love easy. I don’t have the patience or attention span for anything that takes longer than a few minutes to get done. From crafts to food, I have to be able to complete my task in a short amount of time. I’ve always loved cake batter recipes. There are so many ways you can take cake mix and turn it into something spectacular. I especially love it when you can lighten up a recipe by making substitutions. I normally go the diet soda route but this time around I decided to substitute the oil in my cake batter cookies with Yoplait Greek 100 Whips! Pumpkin Cheesecake and I made the right choice!
In all honesty, I’m not a huge fan of yogurt. My husband and kids love it but for me it’s just not the first thing I’d go for when I’m looking for a snack. My husband always asks me to try this flavor or that and I always respond with, “Nah. I’m just not a fan.” Well. I found Yoplait Greek 100 Whips! Pumpkin Cheesecake while shopping in Walmart and thought maybe, just maybe I’ll like this one. I grabbed a few figuring if I didn’t like it, someone else in my house surly would. When I got home I popped it open and was so impressed. I found that it didn’t have a strong yogurt taste. It was light and fluffy and delicious! Now this. This is something I can incorporate into my diet! I could have stopped there but being the sweets lover that I am I decided to use my new-found favorite yogurt in a cookie recipe. They came out nice and chewy and everyone loved them!
The recipe is super, super easy! You will follow the package instructions but replace the oil with 1 container of Yoplait Greek 100 Whips! Pumpkin Cheesecake. Bake as directed. Since this makes such a great seasonal treat, add some fall colors by drizzling melted orange chocolate over the cookies after they have cooled.
